Convection Oven

A convection oven creates an even temperature by using internal fans that circulate hot air.  Convection ovens cook food faster and are typically more expensive than standard or radiant ovens, but can cook at a lower temperature and often with superior results.  The fan inside a convection oven ensures that the same temperature is being applied to the top and bottom of the food being prepared.  Convection ovens are also called turbo or fan ovens.

Pizza Oven

A pizza oven is simply an oven that primarily cooks pizza.  Restaurants focusing heavily on pizza often times invest in a pizza oven and can advertise the capabilities of an oven that is used solely for cooking pizza.

Deck Oven

Commercial kitchens typically need multiple ovens to meet the demand of their customer volume.  Deck ovens are designed to have one or more baking chambers which allow large volumes of food to be cooked at once.  Deck ovens come in three types including:

  • Thermal Oil

Microwave Oven

A microwave oven is something we are all familiar with and is probably a product we all have in our homes.  Commercial microwave ovens however allow for larger portions to be instantly heated.  Manufacturers make large microwave ovens specifically for commercial kitchen use which come in handy when food needs to be heated quickly.

Purchasing the Right Commercial Refrigerator

Restaurants looking to purchase a commercial refrigerator have a few things to consider.  Size of the refrigerator, cost and daily use of the commercial refrigerator should all be considered prior to making the purchase.  Below are some tips for restaurant and business owners looking to purchase a commercial refrigerator.

The first thing you should consider is price.  Don’t settle for a used or “cheap” commercial refrigerator.  Although this purchase can save you money early on, it could come back to cost you significantly over the long haul.  Used commercial refrigerators are often dated and don’t enjoy all the attributes technology has afforded.  This can lead to the refrigerator using more energy thus forcing you pay higher energy bills.  And used commercial kitchen equipment sometimes has to be replaced sooner rather than later.

The next thing you should consider is size.  Because not all restaurants experience the same type of customer volume, a smaller refrigerator may make more sense than a larger one if you are a restaurant who doesn’t experience heavy volume.  Be realistic about the amount of business your restaurant does prior to making your refrigerator purchase.

Lastly, think about what your refrigerator should look like.  Sure, stainless steel kitchen products are easy to clean, but it may make more sense to have a refrigerator with a glass front.  This will allow your staff to view the products inside the refrigerator without the need of always having to open it.  Again, this is another clever way of cutting energy costs.
